Spinach and Mushroom Chicken

For some reason I thought that I'd posted this recipe on here, but I cannot find it for the life of me. So I'm sharing it again. I made this a couple of weeks ago for our neighborly dinner exchange and it was a hit. It's the easiest recipe in the world and oh so delish.

I don't have a picture of this, though, so I'll come back and add one to this post when I make it again. I promise it's worth it though.

Ingredients
2 Chicken Breasts
1 bag of fresh spinach
1 carton fresh mushrooms
1 cup mozzarella cheese
2 lemons
Lemon Pepper
Seasoning Salt

Directions
Place spinach at the bottom of your baking dish.
Squeeze the juice of the two lemons all over the spinach.
Rinse chicken and season both sides with lemon pepper and seasoning salt as desired. Place on top of the spinach.
Clean the mushrooms and chop them into pieces. Place on top of the chicken.
Spread cheese evenly on top.
Cover with foil and bake at 350 for 25-30 minutes. Remove foil and let the cheese brown.

I typically serve this with orzo or cous cous and it's always tasty. You can adjust the cooking time on your chicken based on how well you like it cooked. I usually cut into it at some point to make sure that there is no pink left.
