Oatmeal Cupcakes






I switched things up a bit with this recipe. I used some of HUT's whole milk, so I also added in a bit of brown sugar to sweeten up the recipe. Also, we had some blueberries in the fridge that needed to be used, so instead of raisins or chocolate chips I used the berries. I made these a second time with some leftover dried apricots and they were delish as well!

Paula Deen's Chicken Spaghetti



Not the lightest meal you'll ever make, but it's super delicious. This is a great one to make because it easily provides enough for one large meal, and another to freeze. Great for meals for friends, new moms, etc. We made this one night while on vacation and froze one to eat on another night. It's also a great idea for dinners with large groups.

Pioneer Woman's Apple, Pecan and Blue Cheese Salad



I don't have a pic of this, but I loved this salad. I did, however, omit the apples because we were cooking for a large group and I prepped the salad ahead of time. I didn't want the apples to brown, so I left them out. It was still super delicious and I think it's going to become a regular menu item in our household.

  1. Oh my gosh, I'm drooling over the Chicken Spaghetti, I'm going to have to save that to try once I start allowing myself to eat carbs again. It looks so good, and I love dishes that are big enough to eat for a few days in a row!
