Corn Quinoa Salad
Made this per directions, although I went a little less on the maple syrup. Everyone who ate it raved about it!
Chicken Marsala Casserole
A couple of things. Don't try to cut out the cream. My mom made it with whole milk and it just wasn't the same as my cream version. Also, I was worried about the rice, so I cooked my rice al dente in chicken broth before adding it to the casserole dish. I made the mistake of added two CUPS of wine to this, so I had a ton of extra sauce. I just poured what I thought was best onto the casserole, then stored the rest of the sauce away. I used it later in the week to make pasta as well. Delish!
We added prosciutto to this and chopped up a couple of large mozzarella balls to use for this. I also used ciabiatta, but any good bread will work.
