Avocado Shrimp Salad

We made this last week for the concert on the lake and it was so fabuloso that I had to share. It's super easy, and surely not the first time anyone has ever made this, but this is what we came up with and I'm sharing it anywho. I didn't put exact amounts of most of the veggies because you can truly as as much, or as little, as you prefer and it should still taste great!


Salad Ingredients

1 pound shrimp
Green onion
Radishes
Celery
Cilantro
Grape tomatoes
2-3 Avocados

Directions

Cook, peel and devain shrimp.
Let shrimp cool completely.
Chop onion, celery, radishes and tomatoes.
Chop cooled shrimp.
Cut avocados into chunks.
Combine everything, add salt and pepper if needed, and coat with dressing (see below) and a little extra lemon juice so that the avocados don't brown.


For the Dressing

We used the same dressing that I found on Pinterest for the quinoa salad I made a few weeks ago - we've used it on quinoa, a regular salad and now this...

Ingredients

1/2 cup olive oil
1/4 cup fresh lemon juice
3 T maple syrup (I usually use less than this)
1 T Dijon mustard
1 tsp salt
